Our story

Intro

Hacienda Sajonia is owned by Raja Dakshinamurthy, who arrived in Nicaragua in 2018. He found Hacienda Sajonia in a state of decline but was attracted by the farm’s potential for producing seriously good coffee as well as its stunning location. It was an opportunity that he could not let slip away and he embarked on a journey to rejuvenate the coffee farm and to produce top quality speciality coffee. Besides the determination to produce the highest quality of the coffee the farm also continuously improve the social and environmental conditions for the workers.

About our coffee

Biological control is used to control coffee borer and rust, also incorporates compost made from coffee pulp + biochar to reduce use of herbicide and nitrogen fertilizers which also reduces carbon footprint. Coffee cherry is processed in a Penagos wet mill with mechanical mucilage removal with minimal use of water and 100% sun-dried on the patio for slow dry process. Careful and gradual planning is used when selecting where the conditions are just right for growing coffee.
